Family businesses rather than large plantations

Arabica beansfrom the highlands of Ethiopia form the basis for almost every variety of Dallmayrcoffee. Situated in North East Africa, the country provides an ideal combination of fertile soil, high altitude and a benevolent climate. To this day, the cherries are harvested from coffee plants that grow wild in forests or are cultivated on small farms.

Quality from the bean to the cup

Working in close contact with the farmers, our experts visit locations to inspect the quality in person. Even when they are still growing on the bushes, the cherries hint at the quality of the beans inside, and ultimately of the coffee in the cup. Our experts buy only coffee that has ripened slowly and fully in high regions with a favourableclimate and that has been carefully picked and prepared by hand. Back in Germany, our experts sample up to 400 cups of coffee every day to test different deliveries and to determine which blends should be used. Hardly any other brand has defined people’s taste in coffee for generations as much as Dallmayrprodomo. To this day, many will settle for nothing but ‘their prodomo’. New worlds of coffee. A broad coffee horizon

The rule used to be simple: the further north a country was in Europe, the lighter the beans preferred by those who lived there.Even within Italy, those in the south liked their espresso beans darker than their compatriots in South Tyrol. Today, coffee-drinking habits have changed. Preferences can no longer be separated, and worlds of coffee have collided. People in Germany who like to start the day with a roast coffee from a cafetière, for example, might enjoy a café crème after lunch and an espresso in the evening. With every change in taste, we also expand our coffee horizon and establish new trends. The DallmayrCremad’Oroproduct range combines the traditional high quality of our roasting plant with a ‘flavourof the south’. Tips from our coffee master

When you prepare coffee using a fully automatic or semi-automatic machine, the café crème or espresso should flow out in an even, foamy stream after three to five seconds. If it turns watery towards the end, pull the cup away, because the liquid is more bitter at this stage

Holiday feelingfor the last 50 years

Those who always connect the name Dallmayrwith filter coffee only know one of our facets. We can look back at a long tradition of espresso. Maybe that’s because Munich likes to call itself Italy’s northernmost city. Paying homage to the city’s Italian flair, we created DallmayrEspresso Monaco in 1964. At that time, German holidaymakers were discovering Italy –and with it the espresso bar. Those travellersfrom the “land of the filter coffee drinker” came into contact with the small, dark shot of coffee for the very first time,. Focusing on interacting responsibly with both humans and nature, coffee growers learn efficient growing methods that are aimed at increasing the profitability of their farms, thereby ensuring improved prospects for the future. Around 50 years ago, KonradWerner Wille, a pioneer in the coffee industry and co-owner of the Dallmayrbusiness, discovered the wild-growing ancestral plant during his adventures. It is now considered a botanical treasure, because all arabicabushes around the world are descendants of this specimen. Back then, KonradWerner Willewasted no time in arranging for the coffee to be brought back to Germany. Since then, we have been the world’s largest importer of washed arabicabeans from Ethiopia. As a result of this, we feel a particular connection to this East African country and to Karlheinzand AlmazBöhm’scharity work for Ethiopia

Thanks to its extremely low administrative overheads, it is able to provide the maximum possible level of support.Together with farmers, simple but effective solutions are implemented to secure the future of the next generation. We have supported the foundation in numerous projects over the years, not least because we are deeply rooted in the country’s coffee-growing culture.

The original coffee ritual

Ethiopians also love their coffee and celebrate what they call ‘bunna’. Their method of preparation is most likely the most original –and also the most time-consuming. The beans are roasted in an iron pan over charcoal before being crushed with a pestle and mortar. The grounds are then heated in a clay jug with water and sugar, enhanced with a little cardamom and finally served in small bowls

Freshly roasted from exclusive porcelain vases

We created the coffee selection rangeespecially for our delicatessen around 40 years ago. All these years later, buying one of these classic varieties is still an experience. Our staff scoop the beans by hand out of precious coffee vases, which are well known from our television commercials. The elaborate vases were made by craftsmen at Nymphenburgusing the finest porcelain in the early 1950s, following the restoration of the Dallmayrbuilding. The painter Professor Robert Raabalso designed the exotic plant and animal patterns. All five varieties are freshly roasted, weighed on antique beambalances and carefully packaged by hand. Depending on your preferred method of preparation, we will grind the beans from fine to coarse.
